Crystallised citric acid or citric acid is an additive that is commonly used in households, especially for the process of pickling. It speeds up the gelling process, when preparing jams and keeps the color of the fruit. The Crystallised citric acid is used for taste correction, i.e. it gives a sour fresh taste when used in moderation. Due to its high acidity (low pH), the Crystallised citric acid also acts as a preservative, as many bacteria cannot live in an acidic environment.
