
Elder is a shrub or small tree, reaching 2–6 m in height. Its flowers have a characteristic, very pleasant aroma, and the taste is initially mucilaginous-sweet, then slightly piquant and bitter. The fruits are small, juicy berries which, when ripe, turn dark violet and are full of juice.
Elder blooms from May to July. The flower clusters are harvested in fine, dry weather, immediately after the flowers open.
Elderflower is rich in numerous flavonoid compounds, mainly heterosides. It contains a significantly high amount of potassium salts, and, in smaller amounts, essential oil, mucilages, tannins, phytosterols, and vitamin C.
Elder Tea contains the tiny elder blossoms gathered from hidden mountain meadows. The tea is exceptionally distinctive, with an irreplaceable flavor of sweet fruit and honey, reminiscent of vanilla and lemon.
How best to enjoy this tea? While suitable for all seasons, it is at its finest when you need warmth, perfect for cozying up on cold winter days. In summer, it is recommended to serve chilled, where it proves surprisingly refreshing.
